you say tomato. . . .

I love tomato soup. I love it year round. I could eat it for breakfast, lunch and dinner. I don't know if you can tell or no, but I really love tomato soup. So much that I decided to try to make some! Below is the recipe that I used, plus a picture or two of my delicious soup!

The Recipe

  • Cook 2 chopped onions in 2 tablespoons olive oil with 1/2 teaspoon salt.
  • In a large pot over medium heat stir occasionally until softened (4-6 minutes)
  • Add 1 28 ounce can whole, peeled tomatoes (with their juices), 4 cups chicken broth and 1 teaspoon oregano.
  • Simmer until beginning to thicken. 10-15 minutes. Then puree in a blender.
  • Top with once cup croutons and Parmesan cheese.

I even canned some to take as lunch!
